BESDIE YOU IN TIME is a mixed fermentation beer, first cleanly soured, then co-fermented with Belgian Saison and Kveik yeasts before being aged in apricot brandy barrels with a blend of Brettanomyces for two years. This blend of yeast, bacteria, and contact with the oak barrel - given the luxury of time - has forged a complex, light, winey base beer into which we have steeped locally foraged elderflower, that adds a subtle floral note to the aroma and aftertaste The highly attenuative yeasts have imparted an inviting dryness to the finish.
