HIDING PLACE // MIXED FERMENTATION // EARL GREY 6.8%

HIDING PLACE is a mixed fermentation beer, first cleanly soured, then co-fermented with Belgian Saison and Kveik yeasts before being aged in apricot brandy barrels with a blend of Brettanomyces for two years. This blend of yeast, bacteria, and contact with the oak barrel - given the luxury of time - has forged a complex, light, winey base beer into which we have steeped a small amount of earl grey tea. This has added both a savoury, floral element and citrus notes from the bergamot oils. The highly attenuative yeasts have imparted an inviting dryness to the finish.
